This week, I am making my own home-smoked breakfast sandwiches by hand. I’ve been using a dehydrator to make a sandwich-like crust that is then smoked over an open fire. The sandwich is finished with a little bit of fresh rosemary and fresh cilantro. This week, I was challenged with a simple question.
Why do we smoke our breakfast sandwiches? Because we want to taste it. Because we want to make it better. Because we want to celebrate it.
